Serve ½ cm thick slices of Esrom with toasted rye bread and apple relish. The Danish speciality rye bread can be replaced with toasted wholegrain bread.

Apple relish (accompaniment for 4 people):

Stir together a dressing of:

  • 1-2 tsp white balsamic vinegar
  • 2 tsp grapeseed oil 
  • 2 tsp walnut oil
  • 1 tsp maple syrup
  • salt and pepper

Cut 2 Belle de Boskoop or 4 Pigeon apples into small pieces, place them in a bowl and pour over the dressing. Turn and let the relish infuse in the fridge.
